special courses and master classes.

BAKING-DESSERTS

AIALA is run by Raúl González Glz. De Mendoza, a young man with extensive training and experience in the world of catering, having worked both at home and abroad, and a permanent fixture at the school since its inauguration.

Karlos Arguiñano Urkiola, founder of the AIALA School.

He began studying Cookery aged just 17 years old at the Hotel Euromar catering College in Zarautz, tutored by the Master of all Masters: Luis Irizar.

Eva Arguiñano began working in the kitchen, aged just 16, as a pastry assistant along with her brother Karlos.

She is in charge of baking-desserts in the Restaurant and she gives classes on this subject throughout the year.

HEAD OF BAKING-DESSERTS

Manuel Piñeiro is the School's Head Chef and second year tutor. He was a section manager in the Karlos Arguiñano restaurant, combining his excellent training and wide-reaching professional experience. He has given classes on Basque Cuisine all over the country and abroad.

Thierry Vallespir, hailing from Bordeaux (France) is sous chef and first year tutor. He worked in France and later in the Basque Country, bringing his experience to enrich how he puts across his culinary knowledge.

Lordi Etxaondo is head of baking-desserts and the Master's tutor. Born in San Sebastián, he started out in the world of cooking
aged just 17.

Among others, he has worked with Ferrán Adriá and Martin Berasategui.

In turn, he is also in charge of events catering for the Karlos Arguiñano group.

OENOLOGIST, SOMMELIER

Jose Ramón Aguiriano, renowned restaurateur from Vitoria, is an oenologist and member of the Idiazabal cheese executive.

His classes at the school are quite an experience.
